The 2011 Craft Brewers Conference (CBC) is already shaping up to be one of our best events to date. With its deeply rooted craft beer culture, there are plenty of good reasons to visit San Francisco, but we know that the heart of CBC is providing great educational and professional development opportunities. As usual, CBC will offer a wide range of seminars for craft beer professionals in all capacities, but here are a few special sessions you won't want to miss at this year's event:

Delaware Calagione and the Lost Temple of Yeast

Sam Calagione and Floris Delee, Dogfish Head Craft Brewery

Sam and Floris discuss the process of capturing, cleaning and brewing with an indigenous brewing yeast in an ancient Egyptian ale project. What pitfalls did these brave adventurers encounter and how can brewers use this knowledge in their own brewery?

The Green Brewery Project: Applied Research in Sustainable Brewing Systems, Practices and Technology

Four graduate students started the Green Brewery Project to reduce the ecological impact of the Corner Brewery's operations by developing a proposal to reduce energy consumption, implement renewable energy technology, improve wastewater management and cultivate awareness in the community. Methods and findings will be presented.

Barrel-Aged Sour Beers from Two Belgians Perspectives

Vinnie Cilurzo, Russian River Brewing Co. (moderator); Yvan de Bates, Brasserie de la Senne; Jean Van Roy, Cantillon

Belgians brewed barrel-aged sour beers decades ago. With the proliferation of American-brewed versions of these beers, moderator Vinnie Cilurzo will continue the discussion on brewing these highly unique and unpredictable beers with two highly acclaimed Belgian (Lambic) brewers, Jean Van Roy and Yvan De Bates. This seminar is a companion to Vinnie's barrel aged beer seminar he presented at last year's CBC.
