Fermentation Sciences

The Fermentation Sciences program is an inter-disciplinary B.S. degree offered in the A.R. Smith Department of Chemistry and Fermentation Sciences, within the College of Arts and Sciences, that provides students with a strong background in chemistry and biology as well as a considerable focus in business, marketing and entrepreneurial principles. Students can then focus in the scientific and production aspects of brewing, wine making, distillation, or biofuels and bioprocessing.

The Fermentation Science and Technology Program is a science-based program that challenges the student to understand the chemistry, biochemistry, and microbiology of fermentation from both a food and beverage perspective. The BS degree in fermentation science prepares students for careers in fermentation-related industries, including brewing and distilling science and quality control. Fermentation option – Food Science & Technology

Virginia Tech is offering a Fermentation Option as part of the Food Science & Technology undergraduate curriculum. This option provides both theoretical & hands-on training in fermentation to uniquely prepare our students for jobs related to fermented beverages, dairy fermentations, & biotech fermentation. Sustainable Brewing

The program offers students the opportunity to earn a certificate or associate degree at Kalamazoo Valley Community College, then transfer to a BS degree that marries industry art and science with WMU’s national reputation in sustainability. Kwantlen Polytechnic University

Brewing & Brewery Operations Diploma

Located in picturesque British Columbia (BC), Kwantlen Polytechnic University’s (KPU) Brewing and Brewery Operations program is the first brewing program in Canada to be recognized by the Master Brewers Association for offering a standard of excellence in brewing education, and was named top brewing school in North America at the 2019 U.S. Open College Beer Championship. American Brewers Guild

Intensive Brewing Science & Engineering

Through a combination of online learning, text books, brewer-instructors on DVD, and one week on-site at our working brewery, students learn professional brewing concepts and acquire skills geared toward working in a commercial brewery or brewpub.

The American Brewers Guild offers two programs: the Craftbrewer’s Apprenticeship (CBA) and the Intensive Brewing Science & Engineering (IBS&E). They follow identical courses of study for the first 22 weeks, then the CBA continues with a five-week apprenticeship.

Craft Brewing Certificate

The Craft Brewing Certificate is a 16-credit interdisciplinary program offered by Continuing Education, in partnership with the College of the Sciences and is designed to be completed in one academic year sequence (10 months). The certificate program will provide you with an overview of the biochemistry, microbiology, technology, and business of craft brewing. Courses are challenging and interactive, and include laboratory work, hands-on brewing, field trips, tastings, and industry speakers.

Taught by leading professional brewers and other industry experts, the UC San Diego Extension Brewing Certificate is a part-time, evening and weekend program that offers academic and practical training for brewing professionals. The certificate can be completed in 12-18 months within a 5 year span. All elective courses, with the exception of the Brewing Internship, are open to the public. An application and prerequisite coursework are not required to enroll in any elective course.

This mostly online Brewing Laboratory Science Certificate Program focuses on laboratory science practices that maintain quality control and assurance for brewing. Students conduct tests to ensure correct alcohol content, color, flavor, carbon dioxide, and other variables.
