Cleaning and disinfection in the brewing industry encompasses many changing conditions as the path of beer production is followed. Various cleaning procedures and CIP cycles are performed in order to get all equipment and parts, which are used for beer production, cleaned and sanitized. This seminar will look behind the scenes and identify the types and sources of fouling. It examines detergents and how they react with fouling agents. This examination will have a special focus on oxidizing chemicals, particularly hydrogen peroxide. In order to overcome the deficiencies of each CIP system, careful consideration must be applied when choosing the proper detergent.
