What’s your current position at your brewery, and how did you get started in the craft brewing industry?

I am the owner, brewer, cellarman, delivery driver, janitor, plumber, etc. [at Peticolas Brewing Co. in Dallas, Texas].

What’s new at Peticolas Brewing?

Everything!  We brewed our first batch December 30, 2011! Velvet Hammer, a 9-percent Imperial Red Ale, was our first beer and has really seemed to find a niche in the industry.  Our most recent beer, Golden Opportunity, is a 4.5-percent easy drinking Kolsch.  It’s perfect for the heat of Texas summer and sales are through the roof.  Perhaps we’ve found our flagships?

What’s the best part of being a part of the craft brewing community?

The people.  I got into the industry because I have a passion for it.  The people I have met along the way have only made my journey that much more enjoyable.

What do you like to do in your time away from the brewery?

Play soccer, mountain bike, skateboard, camp, kayak, fish, snowboard, and play more soccer.

What’s your favorite food and beer pairing?

Our Scottish Ale, the Great Scot!, along with a burger made two blocks from the brewery at a new spot called the Off Site Kitchen.  Excellent harmony and contrast in the pairing.

What’s your biggest accomplishment unrelated to your job?

Running my own law firm for the past seven years.

What’s your favorite beer that your brewery does not produce?

New Glarus Wisconsin Belgian Red.  Fresh Wisconsin cherries!

What’s the most memorable travel destination at which you’ve had a chance to sample the local beer?

Cape Town, South Africa for the 2010 World Cup, which included a nice beer sampling at a local brewpub.  What a day!
