What’s your current position at your brewery, and how did you get started in the craft brewing industry?
I’m currently the head brewer and co-founder of Armadillo Ale Works, based out of Denton, Texas but tentatively brewing out of Deep Ellum Brewing Company’s facility in Dallas. I first got started in brewing when I was hired to work the kegging line at Saint Arnold Brewing Company in Houston after filming a video for them (I have a film degree). It wasn’t long before I was moved into the brewhouse as a brewer and I was hooked after that. After a few years, I moved back home to start Armadillo Ale Works.
What’s new at Armadillo?
We just released our Quakertown Stout in 22-ounce bottles throughout DFW. I’ve been working on a few special releases and finalizing our year-round lineup that we’ll unveil after we finish our fundraising and break ground on our own facility in Denton in 2014.
What’s the best part of being a part of the craft brewing community?
It’s by far the most collaborative and supportive industry I’ve found. I love the fact that craft brewers are one huge family all working for the same goal: better beer.
What do you like to do in your time away from the brewery?
In the rare chance I get a day off, I like to spend time with my girlfriend, catch up on sleep, and maybe check out a local concert or art show.
What’s your favorite food and beer pairing?
For me, there’s nothing better than the spicy pineapple fried rice with pork from Andaman Thai (here in Denton) paired with our Greenbelt Farmhouse Ale.
What’s your biggest accomplishment unrelated to your job?
Starting the brewery really is my biggest accomplishment, but outside of that it would probably be graduating from college (Go Mean Green!).
What’s your favorite beer that your brewery does not produce?
That’s a really tough choice. One beer that I love but rarely get my hands on is Gumballhead from Three Floyds.
What’s the most memorable travel destination at which you’ve had a chance to sample the local beer?
While visiting my brother in Petaluma, Calif. a few years back, I visited Russian River and Anchor. I also spent the better part of a day hanging out with the crew at Lagunitas and had a blast. Those guys know how to host a fellow brewer.
