As the world of non-alcohol (NA) beer and low- and no-alcohol production continues to grow, Fermentis has released a new yeast option, available in dry form: Torulaspora delbrueckii, branded SafBrew™ LA-02. In this session, Fermentis compares their current offerings, SafAle™ LA-01 and LA-02, with this new yeast across multiple physical and chemical parameters, including ethanol production by gravity, fermentation kinetics, and regression of ABV to OG. They share their analysis of volatile compounds produced, demonstrating low levels of many aromatic compounds and insignificant levels of phenols, giving brewers the option to produce a relatively neutral beer with a POF- yeast. They also discuss their sensory analysis of the base beers, which were compared in a pair test, highlighting the differences. Finally, will examine the analysis of living yeast counts across six pasteurization levels (based on traditional D and Z values), identifying the PU levels required to eliminate all living yeast, with reference to the most thermotolerant strain in Fermentis’ brewing portfolio. The session concludes with general recommendations and key findings for usage in the brewery.

Kevin Lane has a bachelor's degree in Integrated Science and Business with an emphasis in Operations Management and Biochemistry. He has been in the beer and potable alcohol industries for over 13 years. He worked for Briess Malt & Ingredients Co. before working for a chemical fermentation company producing food and beverage flavor and aroma products. He joined MillerCoors in 2009, where he ran the pilot brewery, both on the 40-liter as well as the 10-barrel system and was a member of their Global Taste Panel for three years. In late 2013, Kevin continued his career in the potable alcohol industries, working for Fermentis as the Technical Sales Manager for the U.S. and Canada and now as the Technical Sales Support Manager for the Americas. Kevin has been involved in all aspects of the Fermentis business in North America, working in the craft and industrial distilling markets, home and commercial wine and cider making, and in the home, craft, and industrial brewing segments. Kevin has been a judge at international beer competitions such as Copa Cerveza and Copa Cerveza Mexico as well as a speaker at a wide variety of conferences including Master Brewers Association of the Americas district meetings (Ontario, Milwaukee, Texas), the South East Asia Brewing Conference (SEA Brew), HomebrewCon, the California Craft Brewers Association, and others.
