The Hot Steep Method has become an established sensory approach to evaluate malt prior to use. Taken to the next step, an entire malt bill can also be steeped to determine how the malts interact with respect to color and flavor. This presentation walks through the hot steep method. Attendees in the live session taste individual steeps of an array of malt types while discussing their various attributes. Participants design unique malts bills, perform a hot steep, and taste and discuss the final result.
