What’s your current position at your brewery, and how did you get started in the craft brewing industry?
I am the head brewer (and currently the only brewer) at Under Cover Ale Works in Blairsden, Calif. I was also the plumber, contractor, and building/brewery layout designer.
What’s new at Under Cover Ale Works?
The only thing that is not new at our brewery is the hand-cut square nails we put in our Douglas fir floor upstairs. I rescued them from an old stagecoach stop that was being burned down. They were handmade in the late 1800s.
What’s the best part of being a part of the craft brewing community?
Throughout all the phases of constructing our new brewery, the craft brewing community was there for us with answers regarding floors and floor drains, cleaning, and procuring equipment and ingredients. The resources available to help us not reinvent the wheel were often a sigh of relief. Cheers to you all for sharing important information.
What do you like to do in your time away from the brewery?
Backpack with my sweetie and our dogs. Would someone please invent a dehydrated tasty craft beer to take backpacking?
What’s your favorite beer and food pairing?
Fresh, spicy coconut milk Thai curry with a fresh, dry-hopped IPA.
What’s your biggest accomplishment unrelated to your job?
Finding my soul mate and co-brewery owner Susan, and building my home 90-percent solo.
What’s your favorite beer that your brewery does not produce?
Surly Furious—my favorite beer and also from my home state of Minnesota.
What’s the most memorable travel destination at which you’ve had a chance to sample the local beer?
San Diego—they simply have amazing beers!
